Wink Make your own condiments

In almost every house you will find Ketchup, Mayonnaise, and Mustard in the refrigerator. These are the most popular condiments and they are used almost daily. With the prices of everything soaring higher and higher, its hard to constantly purchase these simple items. So I have decided to post some recipies on how to make your own. Once you have the needed ingredients they are not hard to make and you can make them when you need them.


MAYONNAISE
Ingredients needed: 2 large egg yolks, 2 tablespoons fresh lemon juice,2 tablespoons water,1/2 teaspoon sugar, 1 teaspoon dry mustard,1 scant teaspoon salt, 1 cup of your choice of canola,peanut,vegetable or pure olive oil ( do not use virgin olive oils).


Heat egg yolks, lemon juice,water,and sugar in a small skillet over very low heat. Constantly stirring and scraping bottem of skillet. At the first sign of thickening remove from heat and dip bottem of skillet into cool water to stop cooking. Scrap all into a blender and blend for just a second or two. Let stand about 5 minutes to cool, add dry mustard and salt and blend again, while blender is running very slowly add in the oil of your choice. when mixed well transfer into clean container and chill immediatly.


MUSTARD
Ingredients: 1 cup water,2 or 3 tablespoons of lemon juice,3 tablespoons yellow mustard seeds, 3 tablespoons of brown mustard seeds, 1/2 cup flour,2 cloves of garlic,1 tablespoon salt, 1 tablespoons of powdered sugar, 1 tablespoon turmeric.


Combine water, lemon juice and all mustard seeds into a bowl and let stand for 8 hours.
Empty seed mixture into a food processor, add flour, garlic, salt, powdered sugar and turmeric. Puree for 3 minutes. Pour into condiment jar or other clean container and refrigerate.



KETCHUP
Ingredients Needed:5 pounds very ripe tomatoes, 1/2 cup white vinegar,1 tablespoon salt, 1/4 cup sugar,2 cloves garlic,1/2 cup onion,1 tablespoon black peppercorns, 1/4 teaspoon ground allspice,1/4 teaspoon cinnamon,1/4 teaspoon cayenne pepper,1/2 teaspoon ground ginger,1/2 teaspoon garlic powder, 6 cloves.


Roughly chop tomatoes and place into a stainless steel kettle or use an enameled kettle. Add half the vinegar and a few pinches of salt and bring to a boil. Using a wooden spoon mash the tomatoes, while cooking. Strain into a sause pan but do not press on the solids. Press the solids into another pan which will leave the skins and seeds in strainer. Stir the sugar into the more solid mixture. Add all remaining ingredients into the less solid mixture. Bring the less solid mixture to a simmer and cook for about 20 minutes or until its a thick syrup. Strain into the solids and simmer for about 5 minutes. Then pour into a food processor and puree. Taste and add any spices you want to want to make it to your taste. pour into clean container and refrigerate.


I have made these and found that they are usally better than store bought brands. I'm sure your family will love them too.

Default Make your own condiments.

I have been looking for a good recipe for Ketchup and thank you for posting this one. I will be using my printer to make a copy of this post for future reference.

I will also try the one for Mustard as that is one condiment that does not last long in our house at all.

The thing with the one for Mayonaisse is that you have to be careful in how long you keep the Mayonaisse because of the use of eggs in the mixture.

I will be trying all 3 of these recipes in the near future and will let you know how I like them.

Your are correct about the Mayonnaise, and I should have mentioned this. The home made Mayonnaise will last for a little over a week, then it will need to be tossed out. Though it is very quick to make and easy to whip another batch as needed. Thank you for reminding me to add that additional information. I would also love to hear how you like these recipies.

Great idea. I never thought of making my own ketchup before! We go through a lot of all three of these things at my house. I think the kids eat more ketchup at mealtime than they do the meal itself! I have no idea what I spend in a year for these items but I am sure it is alot. Thanks for the recipes.

I must admit I never thought of making these condiments myself either, but I do know that my household goes through alot of them, and the price for them seems to be going higher and higher. I decided to try these recipies and everyone at my house loved them. I also find that it is saving us a good bit of money. I know from no on I will continue to just make my own stuff.
